Meals Made Easy: Farm Stand Salad

Today, Jules (also of In The Kitchen Catering & Food Delivery) shares the next installment in our Meals Made Easy series. Farm Stand Salad

This salad is all about enjoying the sublime simplicity of summer flavors at their best. Freshness and quality of ingredients is key here; if you can pick ingredients up at the farmer's market, great, but just do the best you can! This recipe serves 4 as a side, but if you'd like to bump it up to a main dish, add blackened shrimp (or chicken) and crostini.

  • 3 nectarines, pitted and sliced thinly
  • 3/4 cup pistachios, chopped
  • 1 cup fresh basil, torn (use more if you like- I use a lot more!)
  • 4 vine ripe tomatoes, sliced
  • 2 cups mozzarella, torn
  • 3 tbsp fresh chives, chopped
  • Salt and pepper to taste
  • 3 tbsp good quality balsamic vinegar
  • Drizzle of very good quality extra virgin olive oil

     

    Prepare all ingredients and toss gently in a bowl, taking care not to bruise or break down the nectarines and tomatoes. Season to taste. Serve immediately.
