S'mores Rice Krispie Treats

I've always loved rice krispie treats. I've always loved s'mores. The combination? Divine. This is one of the easiest and most crowd pleasing desserts in my repertoire. They come together very quickly, travel easily and well, and kids and grownups alike clamor for them. Also awesome? My kids love helping in the kitchen with these treats and my son who is allergic to nuts can also indulge. Enjoy!
S'mores Rice Krispie Treats

  • 3 cups rice krispies (you can also try brown rice crisps if you prefer)
  • 1 cup graham crackers crushed into small pieces/crumbs (some pieces are good)
  • 6 tablespoons butter (3/4 of one stick)
  • 1/2 teaspoon vanilla
  • 1 bag of marshmallows (can use large or small)
  • 1 1/2 cups chocolate chips

    1. Preheat oven to 250 degrees F. Grease an 8 x 8 pan. Combine rice krispies and graham crackers in a bowl and set aside. Melt butter, vanilla, and marshmallows in a large pot over low heat. Stir constantly.

    2. Stir cereal/graham cracker mixture into melted marshmallows. Stir until mixed together and cooled. Press into prepared 8 x 8 pan.

    3. Sprinkle chocolate chips on top of rice krispie mixture and put in oven until melted.

    4. Remove pan from oven, let cool, and put in fridge until chocolate hardens. Cut into squares. Enjoy!
